Everybody says ribs take 6 hours. Six hours is a choice, not a law.

This is how I've cooked ribs for the last few years. Cut them into single bones first. Every rib gets bark on every side. Half the time. Twice the bark. And nobody fights over the end pieces anymore.

Cut. Rub. Smoke low. Pan. Sauce. Done.

I cook for my family, football games, charity events and anyone who shows up hungry. These go first. Every time. 🐷

Two racks feed 6 to 8. Prep is about 30 minutes. About 3 hours on the smoker. 🍽️

What you need 🛒

  • 2 racks baby back ribs (pork loin back ribs)
  • Yellow mustard. Just enough to grab the rub.
  • Sassy Swine. Every side. Don't be shy.
  • Your favorite BBQ sauce
  • Butter
  • Brown sugar or honey
  • A foil pan and foil

Membrane, cut, mustard, rub Counter About 30 min
Smoke Smoker at 225°F 1.5 hours
Covered pan: sauce, butter, brown sugar or honey 225°F 1 hour
Uncovered, sauce sets 225°F 30 min
Done Bite test About 3 hours on the smoker

Steps

1. Pull the membrane 🔪

Flip the racks bone side up. Pull the membrane off. It fights back. You win.

2. Cut into single bones ✂️

Slice between every bone. More edges. More bark. More reasons to go back for seconds.

3. Mustard, then rub 🧂

Thin coat of yellow mustard on every rib. Then Sassy Swine on every side. The mustard is just glue. Nobody will know. 🤫

4. Smoke low 💨

Smoker at 225°F with almond pellets. 1.5 hours. Lid closed. Your neighbors will start "just stopping by." 😂

5. Into the pan 🥘

Into a foil pan with BBQ sauce, butter and brown sugar or honey. Cover it with foil. Back on at 225°F for 1 hour. This is where they go tender.

6. Foil off. Sauce sets. 🔥

Pull the foil. 30 more minutes uncovered. Sticky, not soupy.

7. The bite test 😋

Grab one. Taste it. That's the doneness test. Cook's privilege. If you need a second test, that's between you and your conscience.

8. Serve 🍽️

Pile them up. Step back. Watch a party rib disappear faster than a 6-hour rack ever could.
